"Best Part Of The Muffin" Cookies
Ingredients:
- 2 cups granola or rolled oats
- 3/4 cups flour or 1 1/2 scoops of vanilla protein powder
- 2 tbsp Wedderspoon KFactor 16 Manuka Honey
- 1/4 cup maple syrup or low sugar maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 2 tbsp organic coconut oil
- 1/2 tsp baking soda
- 1/3 cup chopped almonds
- 1/4 tsp sea salt
- 2 oz cashew milk (not needed if you want more of a cookie texture vs a fluffy muffin texture)
Directions:
- Preheat the over 350°F
- Mix dry ingredients in a large bowl until well-combined
- Mix in wet ingredients
- Line a baking tray with parchment paper and spray with non-stick spray
- Evenly divide batter into 12-15 cookies and bake for about 10-12 minutes
